El Pretexto is pleased to present this amazing culinary collaboration between two Nature lovers Chefs.
Our main collaborator Chef, Natalia Vallejo has a world-traveling background and is always conscious of her Puerto Rican roots. Most recently, she cooked at the James Beard House last November and opened her own restaurant: cocina al fondo, inside of the cultural space named :Pública. Her menu is designed with the freshest local products in mind. She will join forces with Chef José Carles. Owner of Downtown Boquerón restaurant in Cabo Rojo and former chef of Royal Isabela. His kitchen also highlights the freshest seasonal ingredients and he also is a fisherman, so he cooks what he catches and this is why this dinner is going to be really special.

Chefs will be designing a menu with what is available a few days before this dinner but this is the preliminary menu as a sneak-peak, all made with seasonal local ingredients:

Hors d’Ouvre:

- Arañitas de Cetí con chutney de papaya ahumada
- Arepas de coco rellenas de Balajú guisado

Family Style:

- Bandejas: Crudo de Peto, con chicharrón y aguacate | Ostiones | "Mollejas" de Bulgao con guineítos en escabeche (ají dulce) | Huevas de dorado fritas
- Pez león con calabaza al carbón
- Gnocchi de batata dulce - balsámico - Langostas Galápagos*
- Arroz apaellao con langostinos de mar y almejas

Postres:

- Cazuela de coco, batata y calabaza
- Panacotta de vaina de vainilla con chutney de carambola pretextuosa

The price is per person and includes a pairing designed by Sommelier Giacomo Galati.

To ensure the quality of service, chefs won't be able to accept any menu changes, not even for diet or health restrictions. For this particular event, the menu design is a process between the chefs and what is available, this is why we are only sharing the ingredients. If you understand that you can’t eat one or some of them, is best not to reserve on this particular occasion as no exceptions will be made, unless you are willing to come and don’t eat a particular dish without substitution, then it is your choice. We are sorry for the firmness of our words but is important that it is clear beforehand.

Price is per person and includes all dishes tasting, pairing, service and house water.

El Pretexto is an adult only venue, bringing kids under 18 to this event is not allowed.

Our cancellation policy:

  • Purchase reimbursement will only occur if cancelled 48 hours before the event. Why? By this time the chef has already done the purchase of all food for the reserved spaces, El Pretexto has done the drinks purchase and we are counting with your presence. If something unexpected happened, we invite you to let us know, check if a family or friend can purchase your spaces as we will do our best to find someone to buy them to you but we cannot guarantee it.
